Ingredients
- 2 cups granulated sugar
- 1/2 cup water
- 1/4 cup fresh lemon juice
- 2 tablespoons corn syrup
- 1/2 teaspoon citric acid
- 1/4 teaspoon lemon extract
- few drops yellow food coloring
Instructions
- Step 1: In a heavy saucepan, combine 2 cups granulated sugar, 1/2 cup water, and 2 tablespoons corn syrup. Stir over medium heat until sugar dissolves, then stop stirring and cook to 300°F (hard crack stage) on a candy thermometer, about 10 minutes.
- Step 2: Remove from heat and immediately stir in 1/4 cup fresh lemon juice, 1/2 teaspoon citric acid, and 1/4 teaspoon lemon extract. Add few drops yellow food coloring, stirring until fully incorporated.
- Step 3: Quickly pour the mixture onto a lightly greased baking sheet, then use a spoon to drop 1/2-teaspoon portions. Let cool completely at room temperature until hard, about 1 hour, then break into individual candies.
