- 4 (6 oz each) chicken breasts
- 1 lb, cut into 1-inch cubes potatoes
- 3 tbsp olive oil
- 1, zested and juiced lemon
- 2 tsp, chopped fresh thyme
- 2 cloves, minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss 1 lb cubed potatoes with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper on a baking sheet. Roast for 20 minutes until golden and tender.
- Step 2: Season 4 chicken breasts (6 oz each) with 1/2 tsp salt, 1/4 tsp black pepper, 2 minced garlic cloves, and 2 tsp chopped fresh thyme. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering.
- Step 3: Sear chicken for 3-4 minutes per side until golden brown, then add 1 tsp lemon zest and 1 tbsp lemon juice to the skillet.
- Step 4: Place roasted potatoes around chicken in the skillet, transfer to oven, and bake for 15-18 minutes until chicken reaches 165°F (74°C) internally and potatoes are crisp.
