Lemon-Verbena Sorbet with Citrus Zest

Ingredients
- 3 tbsp fresh lemon juice
- 1/2 cup granulated sugar
- 1/2 cup water
- 2 tbsp, finely chopped fresh verbena leaves
- 1 tsp lemon zest
- 1/2 tsp (mixed orange/lemon) citrus zest
Instructions
- Step 1: In a small saucepan, combine 1/2 cup granulated sugar and 1/2 cup water. Bring to a simmer over medium heat, stirring until sugar dissolves completely, then remove from heat and cool for 10 minutes.
- Step 2: Whisk cooled sugar syrup with 3 tbsp fresh lemon juice and 2 tbsp chopped verbena leaves until fully combined. Strain mixture through a fine-mesh sieve into a bowl to remove solids, then stir in 1 tsp lemon zest and 1/2 tsp citrus zest.
- Step 3: Pour mixture into an ice cream maker and churn according to manufacturer instructions for 15-20 minutes until thick and smooth, or freeze in a shallow dish, stirring every 30 minutes for 2 hours until fully set.
- Step 4: Transfer to a serving bowl, cover, and chill for 1 hour before serving to achieve optimal texture.
