  1. Step 1: Pat 4 bone-in, skin-on chicken thighs dry and season with 1/2 tsp salt and 1/4 tsp black pepper. Heat 2 tbsp olive oil in a large ovenproof skillet over medium heat. Add chicken thighs, skin-side down, and cook for 5 minutes until golden brown.
  2. Step 2: Flip chicken and add 1 sliced medium onion and 2 minced garlic cloves to the skillet. Cook for 2 minutes until onion softens.
  3. Step 3: Pour in 1/2 cup chicken broth, add 1 sliced lemon, and 1 tbsp fresh thyme. Reduce heat to low, cover the skillet, and simmer for 30 minutes until chicken is tender and cooked through.
