Low-Temperature Roasted Chicken

- 4 bone-in, skin-on (about 2 lbs) chicken thighs
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 275°F (135°C). Pat chicken thighs dry with paper towels.
- Step 2: In a small bowl, mix 2 tbsp olive oil, 1 tsp dried thyme, 1/2 tsp garlic powder, and 1/4 tsp black pepper.
- Step 3: Rub the oil mixture evenly over chicken thighs. Place in a single layer in a baking dish.
- Step 4: Bake for 1 hour and 30 minutes, turning once halfway through, until internal temperature reaches 165°F (74°C) and skin is golden.
