Mango and Coconut Parfait

Ingredients
- 1 medium ripe mango
- 1 cup coconut yogurt
- 3 tbsp toasted coconut flakes
- 1 tbsp honey
Instructions
- Step 1: Peel and dice 1 medium ripe mango into 1/2-inch cubes, reserving 1/4 cup for garnish.
- Step 2: In a small bowl, mix 1 cup coconut yogurt with 1 tbsp honey until smooth.
- Step 3: Layer 1/3 cup coconut yogurt mixture into the bottom of two glasses, followed by 1/2 cup diced mango.
- Step 4: Repeat the layering: another 1/3 cup yogurt mixture, then 1/2 cup diced mango.
- Step 5: Top each parfait with 1.5 tbsp toasted coconut flakes and the reserved mango cubes for visual appeal.
