- 1 cup coconut milk

- 1 packet (1/4 ounce) gelatin
- 3 tablespoons water
- 1 teaspoon lime zest
Instructions
- Step 1: Bloom 1 packet gelatin in 3 tablespoons water for 5 minutes. In a small bowl, mix 1 cup pureed mango, 1/2 cup passionfruit pulp, 1 cup coconut milk, 1/2 cup heavy cream, 2 tablespoons agave nectar, and 1 teaspoon lime zest; stir until smooth.
- Step 2: Gently heat the bloomed gelatin in a microwave for 15 seconds until fully dissolved, then pour into the mango mixture while stirring constantly.
- Step 3: Strain the mixture through a fine-mesh sieve into a serving dish to remove any lumps. Pour into individual ramekins or a single dish, then refrigerate uncovered for at least 4 hours until fully set and chilled.
