Ingredients
- 2 cups coconut yogurt
- 1 cup mango
- 1 cup strawberries
- 1/4 cup coconut flakes
- 2 tbsp honey
Instructions
- Step 1: Finely dice 1 cup mango and slice 1 cup strawberries into 1/4-inch pieces, then toss with 2 tbsp honey to macerate for 10 minutes.
- Step 2: Toast 1/4 cup unsweetened coconut flakes in a dry skillet over medium heat for 2-3 minutes until golden, stirring constantly to prevent burning.
- Step 3: In a glass or bowl, layer 1/2 cup coconut yogurt, 1/2 cup macerated mango-strawberry mixture, and 1/4 cup toasted coconut flakes in a 3-layer stack.
- Step 4: Repeat layers once to create two full parfaits, topping each with remaining 1/4 cup toasted coconut flakes and a few extra strawberry slices for garnish.
