Maple-Glazed Carrot and Apple Slaw

Ingredients
- 2 cups carrots
- 2 cups honeycrisp apples
- 2 tbsp apple cider vinegar
- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Grate 2 cups carrots and 2 cups Honeycrisp apples using a box grater or food processor.
- Step 2: In a large bowl, whisk 2 tbsp apple cider vinegar, 2 tbsp maple syrup, 1 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp black pepper until emulsified.
- Step 3: Add grated carrots and apples to the bowl, toss gently until evenly coated, and chill 30 minutes to allow flavors to meld before serving.
