Ingredients
- 3 medium, peeled and sliced 1/4-inch thick green plantains
- 2 tbsp maple syrup
- 1 tsp smoked paprika
- 1/4 tsp cinnamon
- 3 tbsp coconut oil
- 1/2 tsp sea salt
Instructions
- Step 1: Heat 3 tbsp coconut oil in a skillet over medium heat until shimmering. Add 3 medium peeled and sliced green plantains (1/4-inch thick), pressing gently to flatten. Fry for 3-4 minutes per side until golden brown and crisp, turning once with a spatula.
- Step 2: While plantains cook, whisk together 2 tbsp maple syrup, 1 tsp smoked paprika, 1/4 tsp cinnamon, and 1/2 tsp sea salt in a small bowl.
- Step 3: Once plantains are cooked, transfer to a paper towel-lined plate to drain excess oil. Immediately drizzle with the maple syrup mixture and toss gently to coat evenly.
- Step 4: Return to the skillet for 1 minute to set the glaze, then transfer to a serving plate and let cool for 5 minutes before serving.
