Maple-Spiced Oatmeal with Toasted Walnuts

- 1 cup rolled oats
- 2 cups water
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
- 1/4 cup, chopped walnuts
- 1 tsp unsalted butter
- 1/2 tsp vanilla extract
- a pinch pinch of salt
Instructions
- Step 1: In a medium saucepan, combine 1 cup rolled oats, 2 cups water, 1/2 tsp cinnamon, and a pinch of salt. Bring to a gentle simmer over medium heat, stirring occasionally.
- Step 2: Cook for 10-12 minutes, stirring frequently, until oats are thickened and tender. Stir in 2 tbsp maple syrup and 1 tsp unsalted butter until melted.
- Step 3: Remove from heat and stir in 1/2 tsp vanilla extract. Transfer to bowls and top with 1/4 cup chopped toasted walnuts before serving.
