Mason Jar Salsa Verde with Cucumber Dill Spears

Ingredients
- 1 cup fresh tomatillos
- 1 jalapeño peppers
- 2 garlic cloves
- 1/4 cup fresh cilantro
- 2 tbsp lime juice
- 1 medium cucumber
- 1 tbsp fresh dill
- 1 tbsp olive oil
- 1/4 tsp salt
Instructions
- Step 1: Remove husks from 1 cup fresh tomatillos and rinse, then place in a food processor.
- Step 2: Add 1 jalapeño pepper (seeded), 2 garlic cloves, 1/4 cup fresh cilantro, and 2 tbsp lime juice to the food processor.
- Step 3: Pulse until smooth, scraping down sides, then add 1 tbsp olive oil and 1/4 tsp salt, blending until fully combined.
- Step 4: Cut 1 medium cucumber into 1/4-inch thick rounds, then slice each round into 1/2-inch spears.
- Step 5: Toss cucumber spears with 1 tbsp fresh dill and 1 tbsp olive oil in a bowl until coated.
- Step 6: Transfer salsa verde to clean mason jars, filling to 1 inch below the rim.
- Step 7: Serve cucumber spears alongside the salsa for dipping.
