Ingredients
- 4 medium zucchini
- 1/4 cup extra virgin olive oil
- 1/2 cup fresh basil
- 1/4 cup fresh parsley
- 2 cloves garlic
- 1 lemon
- 1/4 tsp salt
Instructions
- Step 1: Use a spiralizer to create noodles from zucchini; if using a mandoline, slice into thin ribbons instead.
- Step 2: In a small bowl, combine 1/4 cup olive oil, 1/2 cup basil, 1/4 cup parsley, minced garlic, and juice from 1 lemon; whisk until herbs are finely chopped and oil is emulsified.
- Step 3: Toss zucchini noodles with 2 tbsp herb oil in a large bowl, coating evenly. Season with 1/4 tsp salt and toss again.
- Step 4: Divide into 4 portions and store in airtight containers lined with paper towels to absorb excess moisture for up to 3 days.
- Step 5: Before serving, drizzle with additional herb oil and garnish with extra basil leaves.
