Mediterranean Chopped Vegetable Salad

Ingredients
- 2 cups, diced cucumber
- 2 cups, halved cherry tomatoes
- 1 cup, diced red bell pepper
- 1/2 cup, finely chopped red onion
- 1/4 cup, pitted and sliced Kalamata olives
- 2 tbsp, chopped fresh parsley
- 3 tbsp olive oil
Instructions
- Step 1: In a large bowl, combine 2 cups diced cucumber, 2 cups halved cherry tomatoes, 1 cup diced red bell pepper, and 1/2 cup finely chopped red onion.
- Step 2: Whisk 3 tbsp olive oil, 2 tbsp lemon juice (from 1/2 lemon), 1/2 tsp salt, and 1/4 tsp black pepper in a small bowl until emulsified.
- Step 3: Pour the dressing over the vegetables and toss gently to coat evenly.
- Step 4: Just before serving, sprinkle with 2 tbsp chopped fresh parsley and toss once more to distribute the herbs.
