  1. Step 1: In a large bowl, combine ground lamb, mint, parsley, garlic, lemon zest, and 1 tbsp olive oil. Mix gently with your hands until well combined but not overworked.
  2. Step 2: Form lamb mixture into 12 small oval-shaped koftas, about 2 inches long.
  3. Step 3: Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Add koftas and cook for 3-4 minutes per side until browned and cooked through, turning carefully.
  4. Step 4: While koftas cook, prepare sauce by mixing yogurt, grated cucumber, dill, and lemon juice until smooth.
  5. Step 5: Serve koftas hot with a generous dollop of cucumber yogurt sauce on the side. Garnish with extra mint.
