Mediterranean Lamb Kofta with Cucumber Yogurt Sauce

Ingredients
- 1 lb ground lamb
- 1/4 cup finely chopped mint
- 1/4 cup chopped fresh parsley
- 2 cloves minced garlic
- 1 tbsp lemon zest
- 2 tbsp olive oil
- 1/2 cup plain yogurt
- 1/2 cup grated cucumber
- 1 tbsp chopped dill
- 1 tbsp lemon juice
Instructions
- Step 1: In a large bowl, combine ground lamb, mint, parsley, garlic, lemon zest, and 1 tbsp olive oil. Mix gently with your hands until well combined but not overworked.
- Step 2: Form lamb mixture into 12 small oval-shaped koftas, about 2 inches long.
- Step 3: Heat remaining 1 tbsp olive oil in a skillet over medium-high heat. Add koftas and cook for 3-4 minutes per side until browned and cooked through, turning carefully.
- Step 4: While koftas cook, prepare sauce by mixing yogurt, grated cucumber, dill, and lemon juice until smooth.
- Step 5: Serve koftas hot with a generous dollop of cucumber yogurt sauce on the side. Garnish with extra mint.
