  2. Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs and cook for 5 minutes per side until golden brown. Transfer skillet to preheated oven at 400°F.
  3. Step 3: Add 1/2 cup sliced black olives, 1 tbsp rinsed capers, 1/4 cup lemon juice, and 1 tsp dried oregano to the skillet. Roast for 20 minutes until chicken reaches 165°F internal temperature.
