Mini Brik with Herb-Infused Egg

Ingredients
- 8 sheets (8x8 inches) phyllo dough
- 2 tbsp, melted butter
- 1/4 cup all-purpose flour
- 4 large eggs
- 2 tbsp, finely chopped fresh parsley
- 1 tbsp, finely chopped fresh dill
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup vegetable oil
Instructions
- Step 1: Preheat a skillet over medium heat. Brush lightly with vegetable oil to prevent sticking.
- Step 2: Place one phyllo sheet on a clean surface. Brush with melted butter, sprinkle with 1/8 tsp flour, and fold in half to form a rectangle.
- Step 3: Mix 1 egg, 1 tbsp parsley, 1/2 tbsp dill, salt, and pepper. Place a small spoonful of filling in the center of the folded phyllo.
- Step 4: Fold the phyllo over the filling to form a triangle, sealing edges by pressing gently. Repeat with remaining sheets and filling.
- Step 5: Heat vegetable oil in a deep skillet to 350°F (175°C). Fry brik triangles until golden brown on both sides, about 2-3 minutes per side.
- Step 6: Drain on paper towels before serving.
