Mini Chocolate Soufflés with Half-Sugar Sweetness

Ingredients
- 4 oz melted dark chocolate
- 2 tbsp melted unsalted butter
- 1/2 cup sugar
- 4 egg yolks
- 4 egg whites
- 1 tbsp cocoa powder
- 1/4 tsp salt
Instructions
- Step 1: Preheat oven to 350°F (175°C). Butter four 6-ounce ramekins and dust with 1 tbsp cocoa powder, tapping out excess.
- Step 2: Melt 4 oz dark chocolate and 2 tbsp unsalted butter together in a heatproof bowl set over simmering water, stirring until smooth. Remove from heat.
- Step 3: Whisk 4 egg yolks into the melted chocolate mixture until fully incorporated, then fold in 1/2 cup sugar and 1/4 tsp salt until no granules remain.
- Step 4: Beat 4 egg whites with 1/4 tsp salt until soft peaks form. Gently fold the egg white mixture into the chocolate batter until no white streaks remain.
- Step 5: Divide batter evenly among the prepared ramekins. Place ramekins on a baking sheet and bake for 12-14 minutes until puffed and set around the edges but still soft in the center. Serve immediately with fresh berries.
