Miso-Caramel Glazed Carrots with Thyme
Sweet, umami carrots coated in a glossy glaze with subtle miso depth, finished with aromatic thyme.

Ingredients
- 1 lb, peeled and cut into 1-inch sticks carrots
- 2 tbsp butter
- 2 tbsp white miso paste
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp fresh thyme leaves
- 1/4 tsp salt
Instructions
- Step 1: Steam 1 lb carrots in a steamer basket over boiling water for 8 minutes until tender but still crisp.
- Step 2: Melt 2 tbsp butter in a small saucepan over medium heat. Add 2 tbsp miso paste and stir for 1 minute until smooth.
- Step 3: Stir in 2 tbsp brown sugar and 1 tbsp rice vinegar, cooking for 2 minutes until sugar dissolves and mixture thickens slightly.
- Step 4: Add 1 tsp fresh thyme leaves and 1/4 tsp salt, then fold in steamed carrots.
- Step 5: Cook for 3 minutes, turning carrots occasionally, until glaze is glossy and carrots are evenly coated.
