Miso-Caramel Glazed Carrots with Thyme

  1. Step 1: Steam 1 lb carrots in a steamer basket over boiling water for 8 minutes until tender but still crisp.
  2. Step 2: Melt 2 tbsp butter in a small saucepan over medium heat. Add 2 tbsp miso paste and stir for 1 minute until smooth.
  3. Step 3: Stir in 2 tbsp brown sugar and 1 tbsp rice vinegar, cooking for 2 minutes until sugar dissolves and mixture thickens slightly.
  4. Step 4: Add 1 tsp fresh thyme leaves and 1/4 tsp salt, then fold in steamed carrots.
  5. Step 5: Cook for 3 minutes, turning carrots occasionally, until glaze is glossy and carrots are evenly coated.
