Miso-Filled Gyoza with Hidden Ginger Sauce

- 2 tbsp white miso paste
- 1 tbsp grated fresh ginger

- 1/4 cup water
- 1 tbsp vegetable oil
- 1 tbsp rice vinegar
- 2 tsp grated fresh ginger
- 1 tsp sesame seeds
Instructions
- Step 1: In a bowl, combine ground pork, 2 tbsp miso paste, 1 tbsp grated ginger, 1 tbsp soy sauce, 1 tsp sesame oil, and 3 tbsp chopped scallions, mixing until sticky.
- Step 2: Place 1 tsp filling in the center of each dumpling wrapper, fold into a half-moon shape, and crimp edges firmly with a fork to seal.
- Step 3: Heat 1 tbsp vegetable oil in a skillet over medium heat. Arrange gyoza in a single layer, seam-side down, and cook for 2 minutes until golden.
- Step 4: Add 1/4 cup water to the skillet, cover immediately, and steam for 6 minutes until water evaporates and wrappers are translucent.
- Step 5: Uncover and cook for 1 more minute to crisp the bottoms.
- Step 6: While gyoza cooks, whisk 1 tbsp rice vinegar, 2 tsp grated ginger, and 1 tsp sesame seeds in a small bowl to make the hidden sauce.
- Step 7: Serve gyoza hot with the ginger sauce for dipping, ensuring the miso filling reveals its umami depth with every bite.
