Miso-Glazed Carrots with Sesame and Chives

Ingredients
- 1 lb, peeled and cut into 1-inch sticks carrots
- 2 tbsp white miso paste
- 1 tbsp maple syrup
- 1 tsp rice vinegar
- 1/2 tsp sesame oil
- 1 tsp sesame seeds
- 2 tbsp, finely chopped fresh chives
Instructions
- Step 1: Place carrot sticks in a single layer on a baking sheet and drizzle with 1/2 tsp sesame oil. Roast at 400°F for 15 minutes until tender-crisp.
- Step 2: In a small bowl, whisk together miso paste, maple syrup, rice vinegar, and remaining 1/2 tsp sesame oil until smooth.
- Step 3: After roasting, toss carrots with miso glaze until evenly coated and glossy, then return to oven for 5 minutes to caramelize slightly.
- Step 4: Transfer to a serving dish and sprinkle with sesame seeds and 2 tbsp chopped chives while still warm.
