Miso-Glazed Cod with Sesame and Scallions

Ingredients
- 1 lb, skin-on cod fillets
- 3 tbsp white miso paste
- 2 tbsp mirin
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 2 tbsp sesame seeds
- 4, thinly sliced scallions
- 1 tbsp vegetable oil
Instructions
- Step 1: Whisk together 3 tbsp white miso paste, 2 tbsp mirin, 1 tbsp rice vinegar, 1 tbsp honey, and 1 tbsp sesame oil in a small bowl until smooth.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Place cod skin-side down and cook for 4-5 minutes until skin is crisp and golden brown.
- Step 3: Flip cod, brush with miso glaze, and sprinkle with 2 tbsp sesame seeds and 4 thinly sliced scallions; cook for 1 minute more until glaze bubbles and fish is opaque throughout.
