  2. Step 2: Pat salmon fillets dry, then brush both sides generously with glaze. Let sit for 15 minutes.
  3. Step 3: Prepare pickled daikon: Combine rice vinegar, water, sugar, and 1/2 teaspoon salt in a saucepan. Bring to a simmer, stirring until sugar dissolves. Remove from heat and cool slightly.
  4. Step 4: Pack julienned daikon into a jar, pour in cooled pickling liquid, and refrigerate for at least 30 minutes.
