Miso-Glazed Tofu with Bok Choy and Shiitake

Ingredients
- 1 block (14 oz), pressed and cubed firm tofu
- 6 oz, stems removed and sliced shiitake mushrooms
- 4 cups, chopped bok choy
- 2 tbsp white miso paste
- 1 tbsp apple cider vinegar
- 1 tsp sesame oil
- 1 clove, minced garlic
- 1 tsp, grated ginger
Instructions
- Step 1: Whisk miso paste, apple cider vinegar, sesame oil, minced garlic, and grated ginger until smooth. Set aside.
- Step 2: Heat a nonstick skillet over medium-high heat. Add tofu cubes and sear for 3-4 minutes per side until golden brown.
- Step 3: Add mushrooms and bok choy to skillet, stirring to coat with oil. Pour miso glaze over vegetables and tofu.
- Step 4: Reduce heat to low, cover, and simmer for 5-6 minutes until bok choy is tender and sauce has thickened slightly. Serve immediately with extra sauce drizzled on top.
