Miso-Roasted Cauliflower with Sesame Seeds

Ingredients
- 1 large head cauliflower
- 2 tbsp white miso paste
- 1 tbsp sesame oil
- 1 tbsp maple syrup
- 1 tbsp toasted sesame seeds
- 1/4 tsp salt
Instructions
- Step 1: Preheat oven to 425°F (220°C). Cut 1 large head cauliflower into 1-inch florets, discarding stem. Toss with 1/4 tsp salt, 1 tbsp sesame oil, and 1 tbsp maple syrup on a sheet pan.
- Step 2: Whisk 2 tbsp white miso paste with 1 tbsp maple syrup until smooth. Brush evenly over cauliflower florets.
- Step 3: Roast for 20 minutes, flipping halfway through, until cauliflower is deeply golden and edges are crisp.
- Step 4: Remove from oven and immediately sprinkle with 1 tbsp toasted sesame seeds. Let rest for 5 minutes before serving to allow flavors to meld.
