Miso-Tahini Roasted Cauliflower

Ingredients
- 1 head, cut into bite-sized florets cauliflower
- 2 tbsp tahini
- 1 tbsp white miso paste
- 1 tsp rice vinegar
- 1/2 tsp maple syrup
- 1/2 tsp sesame oil
- 1 tsp sesame seeds
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss cauliflower florets with 1 tsp sesame oil and 1/4 tsp salt on a baking sheet.
- Step 2: Roast for 20-25 minutes until edges are golden and tender when pierced with a fork, flipping once halfway.
- Step 3: Whisk tahini, miso, rice vinegar, maple syrup, and 1 tbsp water in a small bowl until smooth; brush over roasted cauliflower.
- Step 4: Return to oven for 5 minutes to set glaze, then sprinkle with sesame seeds and serve warm.
