Mixed Vegetable Steamed Bake with Jaggery and Cumin

Ingredients
- 1 cup potatoes
- 1 cup cauliflower
- 1 cup carrots
- 1/2 cup onions
- 1/2 cup green beans
- 1/4 cup jaggery
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 2 tablespoons oil
- to taste salt
- 1/4 cup cilantro
Instructions
- Step 1: In a large bowl, combine 1 cup diced potatoes, 1 cup diced cauliflower, 1 cup diced carrots, 1/2 cup diced onions, and 1/2 cup diced green beans; set aside.
- Step 2: Heat 2 tablespoons oil in a large pot over medium heat, then add 1/2 teaspoon cumin seeds and 1/4 cup chopped onions (reserved from the vegetable mix); sauté for 2 minutes until onions are soft.
- Step 3: Add 1/4 cup grated jaggery, 1/2 teaspoon coriander powder, 1/4 teaspoon turmeric powder, and salt to taste to the onions, stirring to dissolve the jaggery; then add the vegetable mixture and stir to coat evenly.
- Step 4: Cover the pot with a tight-fitting lid and steam on low heat for 25 minutes until vegetables are tender; stir in 1/4 cup chopped cilantro and serve.
