Mocha Keto Chocolate Mousse

Ingredients
- 4 oz 85% cocoa chopped dark chocolate
- 1/4 cup cold heavy cream
- 2 tbsp unsweetened cocoa powder
- 1/4 cup erythritol
- 1/4 tsp vanilla extract
Instructions
- Step 1: Melt 4 oz chopped dark chocolate in a heatproof bowl set over simmering water, stirring occasionally, until smooth (about 5 minutes).
- Step 2: Remove from heat and cool for 5 minutes. Stir in 2 tbsp unsweetened cocoa powder, 1/4 cup erythritol, 1/4 tsp vanilla extract, and a pinch of salt until well combined.
- Step 3: In a separate bowl, whip 1/4 cup cold heavy cream to stiff peaks.
- Step 4: Gently fold the whipped cream into the cooled chocolate mixture until no streaks remain.
