Moon Palace Chocolate Mousse

Ingredients
- 6 oz dark chocolate
- 1/2 cup heavy cream
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1 tbsp orange zest
- 1/4 cup orange juice
- 1/4 tsp vanilla extract
- 1/4 cup whipped cream
- fresh mint leaves
Instructions
- Step 1: Melt 6 oz dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and cool slightly.
- Step 2: In a separate bowl, beat 2 large egg yolks with 1/4 cup granulated sugar until pale and thick (about 3 minutes). Stir in 1 tbsp orange zest and 1/4 cup orange juice.
- Step 3: Gently fold the melted chocolate into the egg yolk mixture until combined. Fold in 1/4 tsp vanilla extract.
- Step 4: Whip 1/2 cup heavy cream until soft peaks form, then fold into the chocolate mixture until no streaks remain.
- Step 5: Divide mousse into 4 serving glasses and refrigerate for at least 4 hours until set.
- Step 6: Just before serving, top each mousse with 1/4 cup whipped cream and a fresh mint leaf.
