Mushroom and Cheese Gratin
A French-inspired gratin with earthy mushrooms and a rich, creamy sauce made with equal parts milk and cream.

Ingredients
- 8 oz, sliced cremini mushrooms
- 2 tbsp butter
- 1/2 cup, finely diced onion
- 2 cloves, minced garlic
- 1/4 cup all-purpose flour
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/4 cup, grated Gruyere cheese
- to taste salt
- to taste pepper
- 1/4 cup breadcrumbs
Instructions
- Step 1: Preheat oven to 375°F (190°C). Melt 2 tbsp butter in a medium saucepan over medium heat. Add diced onion and cook for 5 minutes until softened.
- Step 2: Add minced garlic and cook for 1 minute until fragrant. Stir in 1/4 cup all-purpose flour and cook for 1 minute to form a roux.
- Step 3: Gradually whisk in 1/2 cup milk and 1/2 cup heavy cream until smooth. Bring to gentle simmer and cook for 3-4 minutes until thickened.
- Step 4: Stir in 1/4 cup grated Gruyere cheese, salt, and pepper until melted. Remove from heat.
- Step 5: Spread sliced mushrooms in a baking dish. Pour sauce over mushrooms, then sprinkle with 1/4 cup breadcrumbs.
- Step 6: Bake for 25-30 minutes until top is golden and bubbly.
