Mushroom and Herb Ground Beef Skillet with Lemon

Ingredients
- 1 lb ground beef
- 8 oz cremini mushrooms
- 1/4 cup finely chopped shallot
- 1 tbsp chopped fresh thyme
- 2 tbsp chopped fresh parsley
- 1 tbsp lemon juice
- 1 tbsp olive oil
Instructions
- Step 1: Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook for 5 minutes until golden brown and tender, stirring occasionally.
- Step 2: Add finely chopped shallot to the skillet and cook for 2 minutes until softened and translucent.
- Step 3: Add ground beef to the skillet, breaking into small crumbles with a spoon. Cook for 6 minutes until browned and cooked through, stirring frequently.
- Step 4: Stir in chopped thyme and 1/2 cup water. Bring to a simmer and cook for 3 minutes, scraping up any browned bits from the bottom of the pan.
- Step 5: Remove from heat and stir in fresh parsley and lemon juice. Taste and adjust seasoning if needed. Serve hot.
