Mushroom and Oat Vegetarian Loaf

Ingredients
- 1 cup, cooled cooked brown rice
- 1 cup, finely chopped mushroom
- 1/2 cup rolled oats
- 1/4 cup, chopped onion
- 2 tbsp soy sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup breadcrumbs
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9x5-inch loaf pan.
- Step 2: In a large bowl, combine 1 cup cooled cooked brown rice, 1 cup chopped mushrooms, 1/2 cup rolled oats, 1/4 cup chopped onion, 2 tbsp soy sauce, 1 tbsp tomato paste, 1 tsp dried thyme, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until well combined.
- Step 3: Press mixture firmly into the prepared loaf pan. Top with 1 tbsp olive oil and 1/4 cup breadcrumbs.
- Step 4: Bake for 40 minutes until golden and firm to the touch. Let rest for 10 minutes before slicing.
