Mushroom and Zucchini Hash with Fresh Herbs

- 1 medium (8 oz), diced into 1/2-inch cubes zucchini
- 1 cup, sliced mushrooms
- 1/2 cup, diced red onion
- 2 tbsp avocado oil
- 1/4 tsp dried thyme
- 1/4 tsp dried rosemary
- 1/8 tsp, plus more to taste salt
- pinch black pepper
- 2 tbsp, chopped fresh parsley
- 1 tbsp lemon juice
Instructions
- Step 1: Heat 1 tbsp avocado oil in a skillet over medium heat. Add the diced zucchini, mushrooms, and red onion. Season with 1/8 tsp salt and a pinch of black pepper. Cook for 7-8 minutes, stirring occasionally, until vegetables are tender and zucchini has released moisture.
- Step 2: Stir in dried thyme, dried rosemary, and remaining salt. Cook for 1 minute until herbs are fragrant.
- Step 3: Remove from heat, stir in fresh parsley and lemon juice, then serve immediately while hot.
