Mustard Seed-Spiced Mixed Vegetable Stew
A creamy South Indian stew with mixed vegetables simmered in coconut milk, fragrant with mustard seeds and cumin.

Ingredients
- 1 cup, diced mixed vegetables
- 1/2 cup, diced onions
- 1/4 cup, diced tomatoes
- 1/2 cup coconut milk
- 1/4 cup, grated fresh coconut
- 1 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp turmeric
- 1/2 tsp red chili powder
- 1 tsp garam masala
- to taste salt
- 1 tbsp coconut oil
Instructions
- Step 1: In a large pot, heat 1 tbsp coconut oil over medium heat. Add 1 tsp mustard seeds and 1/2 tsp cumin seeds, and cook for 1 minute until mustard seeds pop.
- Step 2: Add 1/2 cup diced onions and 1/4 cup diced tomatoes to the pot, and cook for 5 minutes until onions are soft and tomatoes break down.
- Step 3: Stir in 1/4 tsp turmeric, 1/2 tsp red chili powder, and 1 cup diced mixed vegetables, and cook for 5 minutes until vegetables begin to soften.
- Step 4: Add 1 cup water and 1/2 cup coconut milk, and bring to a simmer. Cover and cook for 15 minutes until vegetables are tender.
- Step 5: Stir in 1 tsp garam masala and adjust salt to taste. Garnish with 2 tbsp chopped coriander leaves.
