- 2 medium zucchini
- 1 red bell pepper
- 1 cup cherry tomatoes
- 1/2 red onion
- 1 tbsp finely chopped fresh rosemary
- 3 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Cut 2 medium zucchini into 1/2-inch half-moons, slice 1 red bell pepper into thin strips, and halve 1 cup cherry tomatoes.
- Step 2: In a large bowl, combine zucchini, red bell pepper, cherry tomatoes, and 1/2 red onion (thinly sliced). Add 3 tbsp olive oil, 1/2 tsp sea salt, 1/4 tsp black pepper, and 1 tbsp finely chopped fresh rosemary. Toss until vegetables are evenly coated.
- Step 3: Spread vegetables in a single layer on a parchment-lined baking sheet. Roast for 25 minutes, stirring once halfway, until edges are caramelized and vegetables are tender but not mushy.
- Step 4: Remove from oven and let rest for 5 minutes to allow flavors to meld. The rosemary will be evenly distributed throughout without visible pieces.
