Northern Spice Chicken with Sweet Potato Mash

Ingredients
- 1 lb, skin-on chicken thighs
- 2 medium, peeled and cubed sweet potatoes
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter
- 1/4 cup heavy cream
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with 1 tbsp olive oil, sea salt, and black pepper on a baking sheet.
- Step 2: Roast sweet potatoes for 20 minutes while preparing chicken.
- Step 3: Rub chicken thighs with remaining 1 tbsp olive oil, paprika, garlic powder, dried thyme, sea salt, and black pepper.
- Step 4: Place chicken on top of roasted sweet potatoes. Bake for 25 minutes until chicken is golden and cooked through.
- Step 5: While chicken bakes, mash roasted sweet potatoes with butter and heavy cream until smooth. Adjust seasoning with salt and pepper.
