Northern Spice Chicken with Sweet Potato Mash

  1. Step 1: Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with 1 tbsp olive oil, sea salt, and black pepper on a baking sheet.
  2. Step 2: Roast sweet potatoes for 20 minutes while preparing chicken.
  3. Step 3: Rub chicken thighs with remaining 1 tbsp olive oil, paprika, garlic powder, dried thyme, sea salt, and black pepper.
  4. Step 4: Place chicken on top of roasted sweet potatoes. Bake for 25 minutes until chicken is golden and cooked through.
  5. Step 5: While chicken bakes, mash roasted sweet potatoes with butter and heavy cream until smooth. Adjust seasoning with salt and pepper.
