Northwind Apple Cider Glazed Pork Tenderloin

Ingredients
- 1.5 lb pork tenderloin
- 1/2 cup apple cider
- 3 tbsp honey
- 1 tbsp dijon mustard
- 2 cloves, minced garlic
- 1 cup, diced carrots
- 1 cup, diced parsnips
- 2 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Rub pork tenderloin with 1 tbsp olive oil, sea salt, and black pepper.
- Step 2: Sear pork in a hot skillet for 2 minutes per side until browned. Transfer to a baking dish.
- Step 3: Whisk apple cider, honey, dijon mustard, and minced garlic in a bowl. Pour over pork.
- Step 4: Toss diced carrots and parsnips with 1 tbsp olive oil, sea salt, and black pepper. Arrange around pork in the dish.
- Step 5: Bake for 20 minutes until pork reaches 145°F and vegetables are tender. Rest pork 5 minutes before slicing.
