One-Pan Chocolate Banana Bread

- 2 (about 1 cup mashed) ripe bananas
- 1/2 cup melted butter
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup chocolate chips
Instructions
- Step 1: Preheat a 10-inch cast iron skillet over medium heat. Melt 1/2 cup butter in skillet, then add 2 mashed ripe bananas (about 1 cup) and stir for 1 minute until combined.
- Step 2: Remove skillet from heat and stir in 3/4 cup granulated sugar, 2 large eggs, and 1 tsp vanilla extract until smooth. Return to medium heat and cook for 2 minutes, stirring constantly, then remove from heat.
- Step 3: Whisk 1 1/2 cups all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 tsp baking soda, and 1/2 tsp salt in a bowl. Stir into banana mixture until just combined, then fold in 1/2 cup chocolate chips.
