Ingredients
- 1.25 pounds chicken thighs
- 2 tbsp olive oil
- 4 garlic cloves
- 1/2 cup dry white wine
- 1/4 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat the chicken thighs dry with paper towels and season with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add the chicken thighs and cook for 4-5 minutes per side until golden brown, then remove and set aside.
- Step 2: Add the remaining 1 tbsp olive oil to the skillet, then add 4 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to prevent burning.
- Step 3: Pour in 1/2 cup dry white wine and 1/4 cup chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes to reduce slightly.
- Step 4: Return the chicken thighs to the skillet, nestling them in the sauce. Cover and simmer for 10-12 minutes until the chicken is cooked through and the sauce has thickened slightly.
- Step 5: Remove the chicken and slice thinly. Serve the chicken with the pan sauce spooned over the top.
