One-Pan Herb-Crusted Salmon with Cherry Tomatoes

Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp fresh dill
- 2 tbsp fresh parsley
- 1 lemon
- 12 oz cherry tomatoes
- 2 tbsp olive oil
- 2 cloves garlic
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat salmon fillets dry and season both sides with 1/4 tsp salt and 1/4 tsp black pepper.
- Step 2: Finely chop 2 tbsp fresh dill, 2 tbsp fresh parsley, and zest from half the lemon. Mix with 1 tbsp olive oil, 1 minced garlic clove, and 1/2 tbsp lemon juice to form a paste.
- Step 3: Spread the herb paste evenly over the top of each salmon fillet, pressing gently to adhere.
- Step 4: Place salmon skin-side down on a parchment-lined baking sheet. Arrange cherry tomatoes around the salmon and dot with remaining 1 tbsp olive oil and 1 minced garlic clove.
- Step 5: Bake for 12-14 minutes until salmon is opaque and flakes easily with a fork. Squeeze remaining lemon juice over tomatoes and salmon before serving.
