One-Pan Lemon Garlic Shrimp and Pasta with Spinach

- 8 oz linguine
- 12 oz shrimp
- 4 cloves garlic
- 1 lemon
- 3 tbsp olive oil
- 2 cups fresh spinach
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan
Instructions
- Step 1: Bring a large pot of salted water to a boil. Add 8 oz linguine and cook for 8 minutes until al dente, reserving 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, heat 3 tbsp olive oil in a large skillet over medium-high heat. Add 12 oz peeled shrimp and cook for 2 minutes per side until pink and opaque, then remove and set aside.
- Step 3: Add 4 minced garlic cloves and 1/4 tsp red pepper flakes to the skillet, sautéing for 1 minute until fragrant but not browned.
- Step 4: Squeeze juice from 1 lemon into the skillet, add 2 cups fresh spinach, and cook for 1 minute until wilted.
- Step 5: Return shrimp to the skillet, add drained linguine, and toss with 1/4 cup reserved pasta water, 1/2 tsp salt, and 1/4 tsp black pepper. Cook for 2 minutes until sauce coats pasta, then stir in 1/4 cup grated Parmesan.
