  1. Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 12 oz Italian sausage, breaking it into small pieces with a spoon, and cook for 5 minutes until browned and cooked through. Remove sausage and set aside.
  2. Step 2: In the same skillet, add 2 red bell peppers, 2 green bell peppers, and 1 yellow onion. Cook for 8-10 minutes, stirring occasionally, until vegetables are softened and slightly caramelized.
  3. Step 3: Return sausage to the skillet. Add 1/4 cup red wine, 1 tbsp balsamic vinegar, 1 tsp dried oregano, 1/2 tsp red pepper flakes, and salt and pepper to taste. Bring to a simmer and cook for 5 minutes, until sauce thickens slightly.
  4. Step 4: Serve hot, optionally with crusty bread for dipping.
