One-Pan Sausage and Peppers with Red Wine Reduction

Ingredients
- 12 oz, casings removed Italian sausage
- 2, sliced into 1/2-inch strips red bell pepper
- 2, sliced into 1/2-inch strips green bell pepper
- 1, sliced into 1/4-inch half-moons yellow onion
- 2 tbsp olive oil
- 1/4 cup red wine
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes

Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 12 oz Italian sausage, breaking it into small pieces with a spoon, and cook for 5 minutes until browned and cooked through. Remove sausage and set aside.
- Step 2: In the same skillet, add 2 red bell peppers, 2 green bell peppers, and 1 yellow onion. Cook for 8-10 minutes, stirring occasionally, until vegetables are softened and slightly caramelized.
- Step 3: Return sausage to the skillet. Add 1/4 cup red wine, 1 tbsp balsamic vinegar, 1 tsp dried oregano, 1/2 tsp red pepper flakes, and salt and pepper to taste. Bring to a simmer and cook for 5 minutes, until sauce thickens slightly.
- Step 4: Serve hot, optionally with crusty bread for dipping.
