One-Pan Sautéed Mushroom and Spinach Pasta
A simple weeknight dinner featuring tender pasta coated in a garlicky mushroom sauce with fresh spinach, all cooked in one pan for minimal cleanup.

Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil
- 1 medium, finely chopped onion
- 3 cloves, minced garlic
- 8 oz, sliced cremini mushrooms
- 5 oz fresh spinach
- 1/4 cup chicken broth
- 1/4 cup, grated Parmesan cheese
- 1/2 tsp red pepper flakes

Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 medium finely chopped onion and cook for 5 minutes until softened and translucent.
- Step 3: Add 3 minced garlic cloves and 8 oz sliced cremini mushrooms to the skillet. Cook for 5-6 minutes until mushrooms are golden and release their liquid, stirring occasionally.
- Step 4: Stir in 5 oz fresh spinach and cook for 1 minute until wilted.
- Step 5: Add 1/4 cup chicken broth and 1/2 cup reserved pasta water to the skillet, then add the drained spaghetti. Toss to coat and cook for 2 minutes until the sauce thickens slightly.
- Step 6: Stir in 1/4 cup grated Parmesan cheese, 1/2 tsp red pepper flakes, salt, and black pepper to taste. Cook for 1 more minute until the cheese melts and the sauce coats the pasta.
