One-Pan Shrimp and Linguine with Lemon-Garlic Butter

Ingredients
- 8 oz linguine
- 1 tbsp olive oil
- 4 tbsp butter
- 4 cloves, minced garlic
- 1/2 tsp red pepper flakes
- 12 oz, peeled and deveined shrimp
- 1, zested and juiced (2 tbsp juice) lemon
- 1/4 cup, chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Bring a large pot of salted water to a boil, add 8 oz linguine, and cook for 8 minutes until al dente; drain and reserve 1/2 cup pasta water.
- Step 2: Heat 1 tbsp olive oil and 4 tbsp butter in a large skillet over medium heat, then add 4 minced garlic cloves and 1/2 tsp red pepper flakes, sautéing for 1 minute until fragrant.
- Step 3: Add 12 oz shrimp to the skillet, cooking for 2-3 minutes per side until pink and opaque, then stir in 2 tbsp lemon juice and 1 tsp lemon zest.
- Step 4: Add drained linguine and 1/4 cup reserved pasta water to the skillet with 1/2 tsp salt and 1/4 tsp black pepper, tossing until sauce coats the pasta (2 minutes).
- Step 5: Remove from heat, stir in 1/4 cup chopped parsley, and serve immediately.
