  1. Step 1: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add 14 oz cubed tofu; cook undisturbed for 4 minutes until golden on one side, then flip and cook 3 minutes more until golden on all sides. Transfer tofu to a plate.
  2. Step 2: Add 1 tbsp grated fresh ginger, 1 julienned carrot, and 1 thinly sliced bell pepper to the skillet; stir-fry for 3 minutes until vegetables are crisp-tender and slightly softened.
  3. Step 3: Whisk together 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1 tsp cornstarch in a small bowl. Pour glaze over vegetables, stirring constantly until sauce thickens and coats the pan, about 1 minute. Return tofu to skillet and toss with 3 sliced green onions until evenly coated and heated through.
