Ingredients
- 14 oz, pressed and cubed 1-inch extra-firm tofu
- 1 tbsp vegetable oil
- 1, julienned carrots
- 1, thinly sliced bell pepper
- 3, sliced diagonally green onions
- 1 tbsp, grated fresh ginger
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch
Instructions
- Step 1: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat until shimmering. Add 14 oz cubed tofu; cook undisturbed for 4 minutes until golden on one side, then flip and cook 3 minutes more until golden on all sides. Transfer tofu to a plate.
- Step 2: Add 1 tbsp grated fresh ginger, 1 julienned carrot, and 1 thinly sliced bell pepper to the skillet; stir-fry for 3 minutes until vegetables are crisp-tender and slightly softened.
- Step 3: Whisk together 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1 tsp cornstarch in a small bowl. Pour glaze over vegetables, stirring constantly until sauce thickens and coats the pan, about 1 minute. Return tofu to skillet and toss with 3 sliced green onions until evenly coated and heated through.
