One-Pan Tomato and Spinach Pasta
A simple, one-pot pasta dish with fresh spinach and tomatoes, ready in under 20 minutes for busy weeknights.

Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 2 cloves, minced garlic
- 1 (28 oz) can crushed tomatoes
- 1/2 cup vegetable broth
- 2 cups, fresh spinach
- 1/4 tsp red pepper flakes
- to taste salt
- to taste black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and cook for 1 minute until fragrant, being careful not to burn.
- Step 3: Stir in 1 (28 oz) can crushed tomatoes, 1/2 cup vegetable broth, 1/4 tsp red pepper flakes, salt, and black pepper. Bring to a simmer and cook for 5 minutes.
- Step 4: Add the drained 8 oz spaghetti and 2 cups fresh spinach to the skillet. Toss until the spinach wilts and the spaghetti is coated, adding reserved pasta water as needed to reach desired consistency.
- Step 5: Serve topped with 1/4 cup grated Parmesan cheese.
