One-Pan Vegetable and Cheese Frittata

Ingredients
- 2 tbsp olive oil
- 1/2 cup, diced onion
- 1/2 cup, diced bell peppers
- 1/2 cup, chopped zucchini
- 1/2 cup, chopped spinach
- 6 large eggs
- 1/4 cup milk
- 1/2 cup, shredded cheddar cheese
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp, chopped fresh herbs
Instructions
- Step 1: Heat 2 tbsp olive oil in a 10-inch oven-safe skillet over medium heat. Add diced onion, bell peppers, and zucchini, and cook for 5 minutes until tender, stirring occasionally.
- Step 2: Add chopped spinach and cook for 1 minute until wilted.
- Step 3: Whisk eggs, milk, 1/4 tsp salt, and 1/8 tsp black pepper in a bowl. Pour over vegetables in skillet.
- Step 4: Sprinkle shredded cheddar cheese evenly over top, then cook for 5-7 minutes over medium-low heat until edges set. Transfer to oven at 375°F and bake for 10-12 minutes until center is set and top is golden.
