One-Pot Beef and Pasta with Red Wine Tomato Sauce

  1. Step 1: Heat 2 tbsp olive oil in a large Dutch oven over medium-high heat. Add finely chopped onion and cook for 5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  2. Step 2: Add ground beef to pot, breaking it into small pieces with a spoon, and cook for 6-8 minutes until browned. Drain excess fat.
  3. Step 3: Stir in tomato paste and cook for 1 minute. Add crushed tomatoes, red wine, dried oregano, dried basil, red pepper flakes, 1/4 tsp salt, and 1/4 tsp black pepper. Bring to a gentle simmer.
  4. Step 4: Add penne pasta to pot, stirring to submerge. Pour in 2 cups water, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender.
  5. Step 5: Remove from heat, stir in remaining 1 tbsp olive oil, and let sit for 5 minutes. Serve hot with grated Parmesan.
