One-Pot Chicken and Vegetable Stir-Fry with Rice

Ingredients
- 1 lb (cut 1/2-inch strips) chicken breasts
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- 2 tbsp vegetable oil
- 1 cup broccoli florets
- 1 (sliced) red bell pepper
- 1 cup (sliced) mushrooms
- 3 (minced) garlic cloves
- 1 tbsp (minced) ginger
- 1 cup cooked white rice
- 1 tbsp sesame oil
Instructions
- Step 1: Toss 1 lb chicken strips with 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp cornstarch. Set aside for 10 minutes.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add chicken and cook 5 minutes until browned and cooked through. Remove and set aside.
- Step 3: Add 1 cup broccoli, 1 sliced red bell pepper, and 1 cup sliced mushrooms to the skillet. Cook 5 minutes until crisp-tender. Stir in 3 minced garlic cloves and 1 tbsp minced ginger, cooking 1 minute until fragrant.
- Step 4: Return chicken to skillet, add 1 cup cooked white rice, and drizzle with 1 tbsp sesame oil. Sprinkle with 1 tbsp sesame seeds and cook 2 minutes until heated through and flavors meld.
